Choose whole IQF raspberries when the finished product needs a recognizable berry. Broken pieces suit applications that need larger fruit fragments without a complete berry. Crumble is worth trialing when smaller particles provide the required distribution or texture. The purchasing problem is that a name such as “premium,” “90/10” or “yogurt crumble” does not, by itself, tell you how the fruit was classified or how the percentage was calculated.
A workable comparison needs three things: a definition of each accepted form, a common measurement basis and a trial that reflects the finished product. We would settle those points before comparing the price of two nominally similar grades. Otherwise, a buyer can pay for whole fruit that the mixing process immediately breaks, or approve an economical fragment grade that cannot deliver the intended presentation.
Separate fruit form from the grade name
A raspberry is built from many connected small units called drupelets. In a whole berry, those units retain the recognizable fruit body and hollow center. A broken piece retains only part of that structure. Crumble consists of smaller fragments and separated drupelets. Agree where one category ends and the next begins, particularly for partly damaged berries.

Consider a berry with a small section missing from its rim. One inspector might accept it as whole because its overall shape remains recognizable. Another might place every visibly incomplete berry in the broken fraction. Both can produce a careful result, yet report different whole-fruit percentages from the same material. Reference photographs should therefore include borderline pieces, not just one perfect berry and one obviously shattered sample.
The Washington Red Raspberry Commission’s raspberry formats guide distinguishes whole fruit, whole-and-broken forms and purees. Commercial offers add their own percentage labels and descriptions. Obtain the definition behind each description. A seller’s “extra” grade does not automatically match another seller’s “premium” grade, even when both photographs look attractive.

Puree deserves a separate specification and trial. A bag containing small frozen fragments is not equivalent to a smooth puree, and a puree description does not establish whether seeds remain. Shortlist the relevant raspberry forms before requesting samples, with a separate description for each proposed substitute.
Make whole-fruit percentages comparable
Ask what “90/10” means in the quotation. Does it mean at least 90% whole fruit by weight, with the remainder allowed to be broken? Is it a typical production result rather than a minimum? Does the non-whole portion include fine crumble, and can an individual inspected sample differ from the declared lot result? Record whether the minimum applies to each inspected sample, a combined result or another agreed acceptance rule. Put that basis beside the price so the commercial comparison uses the same promise.
For an agreed weight-based check, the basic calculation is accepted whole-fruit mass divided by the total sample mass, multiplied by 100. The denominator matters. If an inspector removes fines before weighing the sample, the reported whole percentage can increase without any change in the supplied material. Record any excluded material and its mass so another inspector can reconstruct the calculation.

Take a hypothetical 1,000 g sample sorted into 900 g of accepted whole fruit, 80 g of larger broken pieces and 20 g of crumble. Whole fruit is 90% by weight. The combined non-whole fraction is 10%, but its composition is also useful: most is larger fragments, with a smaller fine fraction. Another 90% whole sample could contain the entire remaining 100 g as fine crumble. The two samples share a headline ratio and may behave differently in a visible topping.
These are illustrative buyer-defined classes, not measured XMG samples or official grading results. The example also assumes that the three recorded fractions account for the full sample mass. If material remains on a tray, becomes unclassifiable or includes separately recorded ice, show that balance explicitly. Investigate any unaccounted mass before using the result for acceptance.
Count-based and weight-based percentages are not interchangeable. Large and small berries contribute differently to those denominators, while a broken berry may become several countable pieces. If a supplier reports counts, agree exactly what is counted and obtain results on the required purchasing basis before ranking the offers.
Keep the whole-fruit result separate from the visual size distribution. Two samples may have the same whole percentage but contain different numbers of berries per portion. Where portion appearance matters, record that finished-product observation alongside the ratio. It answers a different question from whether a berry meets the agreed whole-fruit definition.
Check what an official grade actually covers
The USDA frozen raspberry standard is a voluntary grading reference with separate ordinary and manufacturing provisions. Under its definition, a raspberry is “crushed” when more than half its drupelets are crushed, broken or detached, or its normal shape is seriously affected or destroyed. For red raspberries not labelled for manufacturing, the Grade A character provision permits up to 10% crushed fruit by weight. The separate manufacturing Grade A provision permits up to 25%. Those thresholds alone do not establish the full grade, which also considers other quality attributes. The specified evaluation involves thawing until berries are readily separable. A commercial frozen sorting check is therefore not automatically the official method.
That distinction prevents a common purchasing error: translating an ordinary commercial “whole and broken” percentage directly into an official grade. The classification rules, intended grade branch and assessment conditions must match. An official quality grade also does not establish the lot’s food-safety suitability or permission for a particular intended use.
If the quotation claims an official grade, request the exact standard, edition or effective version, applicable product category and evidence supporting the claim. Give that reference to the person evaluating the sample. A shorthand copied into a purchase order can otherwise be interpreted differently by the seller, inspection company and receiving team.
If no official grade is being purchased, a clear commercial specification may be the more practical document. Define the accepted forms and limits under the commercial specification used for the order. A buyer can require a stricter appearance criterion for a decorative application, or deliberately purchase fragments for a filling, provided the other relevant requirements are separately addressed.
Keep official grading and application approval as two named decisions in the file. The first asks whether the lot meets the contracted standard. The second asks whether the supplied fruit works in the buyer’s process. Passing one does not prove the other. A visually attractive berry can still break during dosing, while a suitable crumble may be the preferred ingredient even though complete berries would score better against a whole-fruit appearance target.
Inspect samples without changing the result
Raspberry samples need careful handling because the inspection itself can create fragments. Record how the package arrived, whether the fruit was loose or clumped, and any visible damage before opening it. If a sample is already a solid mass, forcing it apart and then reporting the resulting broken percentage combines two different observations. Photograph the initial condition and resolve how that sample should be evaluated.
Agree the sample state before the comparison. A commercial check of frozen form and an official assessment after specified thawing are different procedures. Do not compare their percentages as though only the supplier changed. The same applies to samples opened immediately on receipt versus samples left on a bench while other work is completed.
Draw material according to the agreed sampling plan rather than picking the most attractive berries from the top. The number of packages, positions and increments should reflect the lot and the decision being made. Specify the required coverage before samples are drawn. If a formal sampling scheme applies, record its reference, lot definition and acceptance rule in the inspection instruction.
For a buyer-defined sorting trial, a useful working sequence is to identify the sample, record its net mass, classify it with minimal handling, weigh the fractions and reconcile the total. Use the agreed reference images at the point of classification. Keep disputed pieces in a separate group until the classification is resolved and added to the shared reference.
Comparing operators can be revealing before comparing suppliers. Give the same classification reference to two people and see whether they place borderline pieces in the same category. If their judgments differ, improve the definition first. Otherwise, the apparent difference between two offers may simply reflect who sorted each sample.
Document the inspection and the application trial separately. Sorting a frozen sample measures the chosen form criteria at that stage. Mixing, cooking, filling or thawing it later measures its performance under another set of conditions. Once the sample has been used in a destructive trial, it cannot serve as the untouched reference for the original whole-fruit ratio.
The specification and sampling process should connect these observations to a signed approval. Keep the sample code, photographs, method and purchasing decision together so the next person can understand what was accepted.
Specify crumble beyond the word broken
Assess crumble by its particle distribution and handling behavior. Small fragments are intentional; the trial should establish which sizes work in the formulation and whether the material separates under normal handling.

Start with the intended particle range and the basis for checking it. If a sieve method is used, define the openings, sample state, handling and calculation. If a visual reference is more appropriate for an irregular form, state its role and limits. A nominal size on a quotation does not explain whether it describes most particles, an upper limit or a screened fraction.
Describe fines independently from larger broken clusters. Excess small material may change the appearance or distribution of a fruit inclusion, while larger fragments can interrupt a target texture. Set separate acceptance criteria from the finished-product trial, then check the proposed supply against them.

Clumping is another separate characteristic. A collection of small raspberry pieces can be supplied as loose particles or arrive joined into a larger mass. Record the condition and agree what separation is allowed during the check. Appearance alone does not establish why a clump formed, whether a temperature excursion occurred or whether the lot is safe. Those questions need the relevant handling records and technical assessment.
Ask about unrelated material and fruit defects in their own specification fields. A favorable whole percentage does not account for everything in a package, and a crumble purchase does not remove the need for normal product acceptance requirements. Keeping the fields separate makes a deviation easier to describe: the issue might be excessive fines, a fused lump or foreign material, each requiring a different response.
Terms such as “yogurt crumble” can be useful application shorthand, but they should trigger a closer specification review. Confirm what the supplier means by the term and test the proposed material in your actual formulation. The name alone does not establish particle distribution, seed behavior, microbiological suitability or an approved process for the finished food.
Choose the form around your finished product
For a product whose appearance depends on a complete berry, whole-fruit retention at the point of presentation is the relevant outcome. Inspect the fruit after the actual handling sequence, not just when the shipping bag is opened. Record whether the visible result remains acceptable after dosing, mixing and the intended preparation or storage stage.
For a filling or mixed inclusion, complete fruit may be unnecessary. Larger fragments can provide visible fruit texture, while smaller crumble may distribute more evenly through a given formulation. Compare candidates with the same fruit addition, mixing sequence, equipment and observation point. Record any process adjustment needed to achieve the target result.

Keep appearance and flavor observations distinct. A higher whole-fruit percentage does not, on its own, establish a stronger raspberry flavor, preferred acidity or more suitable color. If those attributes drive the recipe, include them in the controlled trial and request the relevant supporting information. Do not infer analytical composition from the shape of the fruit.
Cost should follow the accepted result. For a visible decoration, compare the cost of usable portions after handling, including any documented sorting loss. For a filling that uses the entire agreed fruit fraction, paying a premium for intact berries may offer little benefit if the process removes their shape. Record the actual trial recovery before calculating a cost advantage.
Also confirm the intended-use instructions for the offered product. Selecting a form for yogurt, pastry or another application does not establish that the particular lot is ready to eat or can bypass the buyer’s required process. Keep that decision with the responsible technical team and the agreed product documentation.
Carry the approved sample into repeat orders
An approved sample is most useful when the approval explains why it passed. Record the accepted form, classification reference, percentage basis, relevant particle criteria, inspection conditions and application result. Attach dated photographs that show both acceptable material and important borderline examples. A photograph of one attractive handful cannot replace the measurable part of the specification.
Connect the reference to the quoted packaging. Package weight, internal arrangement and downstream handling deserve review when intact fruit appearance is commercially important. If a trial used a small sample bag but the order will ship in a different format, identify what still needs confirmation under that pack. Do not assume the sample alone demonstrates the result after the full distribution route.
For repeat orders, specify which changes require notification or another trial. A different whole-fruit definition, particle selection or pack format can matter even when the product name is unchanged. Keep the latest approved reference identifiable so an older photograph or superseded specification is not used to release a new lot.
If a shipment differs from the reference, describe the difference in the agreed terms before deciding its disposition. “Poor grade” is difficult to resolve. “Whole fraction below the contracted minimum under the agreed method,” or “clumping outside the accepted condition,” gives both parties a specific issue to investigate. Preserve the relevant sample and records under the agreed procedure; avoid modifying the only available evidence while trying to make it look like the approved material.
