Blackcurrants approved for a beverage are not automatically approved for a fruit preparation. A drink trial may prioritise the extracted liquid, flavour at the intended dilution and the required clarity. A fruit preparation may need recognisable berry material, suitable texture and reliable performance during mixing and filling. Both need colour assessment in the actual finished formulation.
Start by identifying what you will buy and what you will make. Whole frozen berries, crushed fruit, puree and juice enter different processes. Link each sample to its supplied form, then define separate acceptance points for the application. Specify what the sample must achieve before comparing candidates.
Begin with the product your customer will drink or eat
A clear blackcurrant drink and a yoghurt fruit preparation can begin with the same fruit while asking very different questions of it. In the drink, the processor may remove skins and seeds before dilution. In a fruit preparation, visible berry material may be part of the intended eating experience. A single appearance photograph cannot establish both outcomes.

Describe the finished product in practical terms. State whether the beverage is clear, cloudy or deliberately contains fruit particles. For a preparation, identify whether it will be smooth or contain pieces, and whether it will be blended into another food, deposited as a layer or served separately. These choices determine which observations will matter during the trial.

Clarify which processing steps your team will perform and which are included in the supplied ingredient. Will your facility extract the juice, remove coarse material, prepare the fruit mixture or carry out a further treatment? Include those steps in the brief so quotations reflect the work that remains with your facility.
Separate an ingredient screening sample from a production approval sample. The first may establish whether a flavour direction or form is worth developing. The second needs the relevant product identity, specification and agreed application conditions. Record the purpose before testing so a promising exploratory result does not become an unrestricted acceptance for commercial supply.
Choose the comparison basis as well. A fixed-recipe comparison shows how candidates behave in the same formulation. An optimisation trial allows the team to adjust each candidate towards the target. Both can support development, but only the first keeps the recipe constant. If the second is used, retain each adjusted formula and its implications for ingredient use and cost.
Include the customer’s visible and sensory priorities in plain language. “Dark enough” needs a reference presentation; “good flavour” needs an agreed tasting context. For a piece-containing preparation, say whether the desired result is recognisable berries, smaller fragments or an even fruit texture. These descriptions help the technical team choose measurements that answer the actual buying question.
Test beverage extraction and the final dilution
If the trial starts with whole or crushed blackcurrants, define how the liquid will be obtained. Record the sample amount, handling, extraction equipment and separation steps. A result from one press or screening arrangement describes that arrangement. It does not establish the yield another processor will obtain with a different feed condition or recovery method.

Use a mass balance that shows where the material went. Record the fruit input, recovered liquid, retained solids and other identifiable losses on a consistent basis. Keep added water separate. Calling a diluted output “juice yield” without declaring the water addition can make two candidates appear more or less efficient for reasons unrelated to the fruit itself.
For example, a hypothetical trial might recover 6 kg of liquid from 10 kg of fruit before any water is added. That is a 60% recovered-liquid mass yield under the stated procedure. If 4 kg of water is then added, the resulting 10 kg mixture does not turn the extraction result into 100% fruit-derived liquid recovery. Retain both figures with their distinct meanings.
Assess the drink at its intended dilution, not only as the concentrated trial liquid. Record the fruit-derived ingredient amount, water and other recipe components. Present candidates in the same way and at the agreed serving stage. A strong, attractive undiluted sample may produce an unsuitable balance once it is used at the level planned for the finished beverage.
Record flavour, sweetness direction and acidity-related observations separately from appearance. When analytical fields such as soluble solids, pH or titratable acidity are required, identify the test method and sample stage. Do not use one of those numbers as a complete flavour score. The development team still needs to judge the prepared drink against its intended sensory reference.
Clarity also needs a defined target. Inspect the liquid after the relevant separation and finished-product steps, using consistent containers, fill levels and lighting. State whether cloudiness, visible sediment or coarse material is unacceptable or part of the design. A result described simply as “clean” can otherwise refer to flavour, visual clarity or incoming berry cleaning without saying which was assessed.
Published blackcurrant research supports keeping process scope visible. The abstract of a commercial-processing study reports different anthocyanin findings from commercial and bench processing. It does not supply a universal colour-retention guarantee. Use that distinction when deciding which promising bench observations still require confirmation through your intended production process.

Assess fruit preparation through mixing and filling
For a fruit preparation, first define the intended fruit structure. A smooth preparation needs a different reference from one that should retain recognisable berries or fragments. Photograph the incoming material, but judge the required structure again after the relevant processing steps. Frozen appearance cannot show how much visible fruit will remain after your preparation has been made and transferred.

Keep the fruit input and other formulation components identifiable in the record. If two trials use different fruit proportions, sweetening systems or thickening ingredients, the resulting texture comparison includes those changes. Record them rather than attributing every difference to the blackcurrants. Keep the exact successful formula with the approval record.

That supports testing the intended product through its handling steps. It does not mean an equipment supplier’s capabilities, particle limits or process claims apply to an XMG partner facility or to every proposed order.
Observe the preparation after mixing and after the transfers relevant to your line. Retained fruit structure at the end of a small vessel trial may change when the mixture is pumped or deposited. Record which observations are available and which stages remain untested. A bench result can justify the next trial without being labelled a completed filling-line approval.
Examine skins, seeds and coarse material according to the finished texture target. Distinguish native fruit material from extraneous matter, and use the agreed definitions when reporting an issue. Review distribution across the filled units you actually examine. Record the sampled units and the observation method rather than selecting only the most attractive spoonful. Where visible fruit content matters, the customer needs a defined way to compare the finished presentation. A photograph of one well-filled cup should remain evidence of that cup, not an unqualified statement about the entire trial.
Connect texture observations to the point of use. A preparation evaluated on its own may feel different when blended into yoghurt, spread in a bakery application or served as a topping. Use the actual base and application method for the relevant approval stage. Keep the standalone preparation result because it can help explain a difference found later.
Follow the product’s approved handling and processing requirements throughout development. In particular, do not assume that a frozen fruit ingredient is ready for direct addition to a finished ready-to-eat food. Have the responsible technical team define the required treatment and hygienic controls for the application. A texture or flavour trial does not validate those controls.
Review colour in the actual formulation over time
Blackcurrant colour should be evaluated where the customer will see it. A dark liquid in a deep container, a diluted beverage and a pale dairy base present different viewing conditions and compositions. Define the final recipe, container, fill level and observation stage before comparing colour. Otherwise, a presentation difference may be mistaken for a raw-material difference.

A 2023 study of blackcurrant juices and model solutions found that storage conditions and interactions involving formulation factors mattered to anthocyanin stability. Its pilot comparison did not show a major colour advantage from the tested low-oxygen pressing system. That specific finding is not evidence that oxygen is irrelevant in every product, nor does it set a shelf life for a buyer’s drink.
Keep colour observations separate from analytical pigment measurements. If both are needed, record both with their methods. An image can document visible hue and distribution under controlled conditions; it cannot quantify anthocyanins or support a nutrition claim. Similarly, a single analytical concentration does not describe how the customer will perceive the final pack on its own.
The way a fruit preparation meets its base also matters to the trial design. The Dairy Processing Handbook describes fruit preparations blended into yoghurt, placed at the bottom or presented separately. Test the format you intend to sell. A mixed cup and a layered cup are different application references even when the same preparation is used.
An original study of fruit-yoghurt colour during storage compared blended and bottom-layer formats using strawberry, sour cherry and blueberry preparations. The observed pigment changes varied with fruit and presentation. Those were not blackcurrant trials. They support checking the actual format, while their storage results and pigment half-lives should not be borrowed as blackcurrant performance predictions.
Agree observation points that match the development question and the product’s intended life. Keep the packaging and storage history with each result. An initial colour approval answers how the sample looked at that point; later observations answer whether the required appearance was maintained under the examined conditions. Have the responsible team define the study needed for any commercial shelf-life decision.
When a colour change appears, retain the associated recipe and processing record before changing the fruit requirement. Review whether the candidate, dilution, base, package or handling differed between observations. A controlled follow-up can then examine a defined question. Changing several factors at once may improve the appearance, but it leaves the cause and repeatability of the improvement uncertain.
Give each application its own approval record
Use separate application records linked to the same ingredient identity. This allows a candidate to pass one application and remain unresolved in another without creating a contradiction. The record should state the supplied form, sample reference, preparation version, observations and decision owner. It should also identify whether the outcome is exploratory, conditional or approved for the defined commercial scope.

Conceptual review stages, not a prescribed recipe or validated processing method. Botanical leaves are illustrative context, not a preparation ingredient.

Consider a hypothetical buyer making both a blackcurrant drink and a yoghurt preparation. Candidate A gives an acceptable drink at the planned dilution, but its fruit pieces become too fragmented in the preparation trial. Candidate B retains a more suitable structure, but its drink needs further flavour development. Neither result justifies calling one candidate universally superior.
The buyer could continue developing two ingredient options, revise one application or run a further controlled comparison. The commercial decision will also consider whether separate products, specifications and stock are workable. Keep those choices explicit. Before consolidating purchases, confirm whether the customer accepts any required texture or recipe change.
When a trial fails, describe the field and stage that failed. “Too many coarse particles after the agreed separation” is more actionable than “poor blackcurrants”. Include the relevant sample reference, method and observations. The supplier and processor can then review whether the issue concerns the proposed material, the trial process or a requirement that was not previously defined.
For repeat trials, keep individual results visible before producing an overall conclusion. Record deviations from the planned method and explain any excluded observation. The amount of repeat work depends on the decision and the variability being examined. What matters is that the approval shows the evidence reviewed and the limits of the conclusion, rather than relying on an undocumented favourable sample.
Connect the accepted trial to the supply specification
Translate the accepted application into clear ingredient requirements. Identify the blackcurrant form, agreed physical and sensory fields, any required analytical tests and the sample version used for comparison. State the application conditions that remain part of the approval. This lets the next reviewer distinguish the supplied material’s requirements from the performance of the buyer’s own recipe and process.

Retain open points in the commercial handoff. If filling behaviour has not yet been tested, say so. If colour has only been reviewed at the initial stage, record that limitation. A purchase discussion can then address the remaining work and timing without implying that an early bench trial already settled every production and finished-product requirement.
Review the affected approval when the supplied form, processing route, formulation or presentation changes. The earlier record remains useful as a reference, but it may no longer answer the new question. Keeping beverage and fruit-preparation approvals distinct makes that review easier and gives repeat orders a more precise technical basis.
