Compare sliced shiitake with three separate results: the thickness distribution, the proportion of material that meets your definition of fines, and the cooked mushroom recovery that your recipe can use. A nominal cut size describes only one part of the offer. It does not establish how many recognisable slices will remain after your cooking, draining and handling steps.
Start with identified samples of the proposed product and a written trial method. Measure the cut at a defined stage, sort fragments against an agreed reference, and cook comparable portions under the same conditions. Keep total recovered mushroom weight separate from the weight of pieces that meet the finished-product requirement. Those two results can rank samples differently.
For a noodle bowl, the useful result may be recognisable cap slices with an acceptable bite. For a sauce or filling, smaller pieces may be entirely suitable. We use that application difference when reviewing a shiitake brief, so a visual preference becomes a measurable requirement before a grade is approved.
Confirm the product behind the slice description
Record the mushroom identity, supplied form, preparation state and packing before comparing dimensions. Confirm whether the product is raw, blanched or otherwise prepared, and whether any oil or other ingredients are included. Two products described as frozen shiitake slices may enter the trial with different processing histories.

The National Center for Home Food Preservation describes both steaming and heating mushrooms in fat before home freezing. That guidance illustrates why preparation needs to be named; it is not an industrial process specification or evidence of how a particular commercial sample was made. Obtain the actual product and process description for the proposed supply.
Next, identify what was sliced. The original cap size, amount of stem retained and cutting direction help explain the finished outline. A broad cap slice and a narrow piece containing more stem may have the same measured thickness while looking different in a portion. Record those features independently instead of expecting the thickness field to control all of them.
Our sliced shiitake product page gives a current working thickness reference of 5–8 mm. Treat that as a starting point for discussing the offer. The quotation must identify the proposed dimension, tolerance, measurement basis and availability for your order. It is not a universal shiitake grade or a substitute for an accepted sample.
If the intended presentation requires whole caps, compare the whole shiitake grade separately. Cutting a whole-cap sample in the kitchen does not reproduce the condition, grading and handling of a supplied frozen sliced product. Trial the form you intend to buy whenever that form is available.
Choose samples that represent the proposed supply
Give every sample a reference that connects it to the product description, supplier proposal, packing and sample stage. State whether it is provided for an initial form review, made before production or taken from an identified production lot. An attractive presentation sample can support a discussion about appearance, but its results should not silently become a statement about every carton in a later shipment.

A separate shiitake product view helps identify the intended slice form. Whether a submitted sample represents the proposed supply depends on its identity and selection record, rather than appearance alone.
Agree how the material will be selected before opening packs. Record the source packs, the amount examined and how portions are taken for dimension checks, sorting and cooking. Avoid selecting only intact or convenient pieces. Keep enough material to repeat an observation that could change the approval decision, with storage and handling defined by the trial procedure.
The Codex General Guidelines on Sampling, revised in 2023, distinguish sampling plans and their risks from simply taking convenient material. Their physical-sampling guidance addresses unbiased selection, including subsequent subsampling. A small application trial has a different purpose from statistical acceptance of a commercial lot; define a separate acceptance plan when that decision is required.
Inspect and record the sample’s received condition. Note package damage, clumps, loose ice and visible breakage without assuming their cause. Photograph the overall sample as well as selected details. If the sample arrives in a condition that could invalidate the comparison, agree whether to replace it or treat it as a separate handling investigation.
Use the preparation state specified for the test. If controlled thawing is needed for a measurement, record the method and avoid leaving food on an ambient bench to soften. The university’s thawing guidance emphasises temperature control. For the cooking trial, follow the product instructions and approved food-safety procedure, including whether the product enters the process frozen or after controlled preparation.
Measure thickness across the cut faces
Thickness is the distance between the two cut faces. It is not the length along a curved cap edge, the width of a slice or the diameter of the original mushroom. Agree where that distance will be measured, particularly when the cut is uneven or a piece includes a stem junction.

Conceptual geometry: the labelled edge view marks slice thickness between cut faces. It is distinct from the broad cap outline or the depth of cap flesh. No measurement or dimensional scale is represented.
Write down the sample state, instrument, orientation and contact method. A soft piece can be compressed, while a frozen piece may have loose ice that interferes with contact. Use a procedure that addresses those conditions without changing the specimen unpredictably. If operators cannot obtain repeatable readings, resolve the measurement method before debating a narrow tolerance.
Mitutoyo’s caliper guidance discusses zero checks, alignment, light contact and repeatability. These are useful instrument principles, not a validated food-specific method. The displayed resolution of a digital caliper does not establish the accuracy of a measurement on an irregular mushroom slice.
Keep the individual readings with the sample reference. Report the observed distribution and the agreed summary, including readings outside the specified band. An average within the target can conceal both thin and thick pieces. Do not select the smallest readings or discard awkward pieces merely to make the nominal grade appear more uniform.
Define the reporting denominator as well. A percentage based on the number of measured pieces is different from a percentage based on their mass. If the purchasing specification uses a mass fraction, a count-based inspection cannot be substituted without agreement. Identify unmeasurable fragments separately so they do not disappear from the sample record.
Define fines before sorting the sample
Agree what counts as an acceptable slice, a permitted partial slice, a larger broken piece and a fine. Add a photograph or retained reference where words leave room for disagreement. A short cap slice is not necessarily a fine, and a small stem fragment may need a separate category if stem inclusion matters to the recipe.
If a screen or sieve is used, define the opening, sample condition, loading and movement procedure. Irregular pieces can pass differently depending on their orientation and handling. A screen-defined fraction and a visually sorted fraction are different measurements. Record the actual method beside the result rather than reporting a bare percentage.

For a mass-based fines result, divide the mass classified as fines by the defined inspected sample mass and multiply by 100. State whether loose ice is included or excluded and how it is handled. Retain all sorted fractions so the sum can be checked against the starting sample, allowing for recorded handling losses.
Inspect the as-received sample before a cooking trial if receiving breakage is part of the specification. Check the cooked output separately if pieces may break during processing. Combining those observations into one undated “fines” result makes it difficult to identify which stage needs attention.
Small edible mushroom fragments are not the same category as foreign material. Their commercial significance depends on the application. Keep the agreed food-safety and foreign-material controls separate from the visual grade, and never treat a low fines percentage as proof that those other requirements have been met.
Run both grades through the same cooking trial
Use the same starting-weight basis, sample preparation, equipment and loading for the comparison. Record the cooking method, time, temperature or heat setting as appropriate, added ingredients, agitation and the endpoint. Define the draining equipment, duration and handling before weighing. Record any difference in these conditions beside the reported yields.

Illustrative trial design: keep the identified portions separate while applying the same cooking method and drain endpoint. The drawings do not predict either sample’s weight recovery or show an actual production trial.
A 2019 study of shiitake cooking methods used fresh mushrooms cut into 5 mm slices and 200 g portions. Its blanching, boiling, microwaving, steaming and roasting treatments produced different cooking yields. The treatments also had different conditions. The study supports controlling the method in a comparison; its results do not set an expected yield for commercially frozen shiitake.
Write the trial method around the intended recipe. A pan trial can help compare the recovery and appearance of a mushroom ingredient, while a finished sauce trial can reveal how those pieces distribute through the product. Decide which result each test must provide. Do not weigh a mushroom-and-sauce mixture and report it as recovered mushroom weight.
Where added oil, liquid or other ingredients remain with the weighed portion, describe the result accordingly. A finished-recipe yield includes those ingredients and needs its own denominator. For a mushroom-only recovery check, use an agreed preparation and separation procedure and retain the record of anything added or removed. Drained weight is an operational measurement, not a measurement of dry mushroom matter.
Assess the pieces at the point that matters for service or filling. Record their recognisable outline, bite, colour and distribution, and any loose liquid relevant to the recipe. If the process includes a holding or reheating step, evaluate that step too under the approved handling procedure. An immediately cooked sample does not describe what remains after the full intended process.
Repeat the comparison with separately prepared portions and retain each result. Keep the sequence and conditions consistent enough to identify variation in the method. If the difference between samples is small relative to the variation between repeats, report that limitation instead of declaring a clear winner from one favourable run.

Calculate the recovery your recipe can use
Define two weights after the agreed cooking and draining endpoint: all recovered mushroom material, and the part of that recovered material that meets the application’s acceptance criteria. The acceptable fraction might consist of recognisable slices with the agreed bite and condition. Record the remaining recovered material separately rather than treating it as if it vanished during cooking.

Hypothetical results under the same cooking and draining conditions. Sample A gives 72% total and 65% usable recovery; B gives 70% and 68%. Usable means meeting the same agreed visible-slice criterion. These are example calculations, not expected yields or acceptance limits.
The following example is hypothetical. Each sample starts with 1,000 g on the same defined mushroom-weight basis and follows the same trial. The output weights refer to recovered mushroom material after the agreed endpoint, with no other recipe ingredients included in the weighed fraction.

Total cooked recovery is recovered cooked mushroom mass divided by starting mushroom mass, multiplied by 100. Application-acceptable recovery uses only the recovered mass meeting the defined criterion in the numerator. For Sample A, the calculations are 720 ÷ 1,000 × 100 = 72% and 650 ÷ 1,000 × 100 = 65%.
Sample A has the higher total recovered weight, but Sample B provides more material meeting this particular slice criterion. The 70 g and 20 g fractions remain mushroom material; another recipe might use them. The example therefore does not establish that one sample is universally better, or that thickness alone caused the difference.
The difference between starting and recovered weight is not automatically measured water loss. It may include material or liquid removed at different stages and any handling loss. If explaining that difference matters, collect and record the relevant fractions. Do not label the unmeasured remainder as evaporation, thaw loss or waste without supporting observations.
Compare useful recovery alongside processing time, portion appearance, texture and the amount of additional sorting needed. Attach the sample weights and calculation to the trial report. A rounded percentage is easier to read, but the underlying weights show whether two reported results use the same basis.
Carry the accepted trial into the supply specification
Connect the accepted sample to the written product description and trial record. List the preparation state, cut definition, thickness tolerance and reporting basis, permitted partial slices, fines method, stem inclusion and application result. Identify the sample reference, review date, approver and fields actually approved.
Separate receiving criteria from application-trial criteria. Thickness and as-received fragment levels may be checked before production use, while cooked recovery requires the defined process. State when each check applies and how a disputed result will be repeated. A supplier’s test and your kitchen trial should be comparable before either is used to reject the other.
Record the packing and handling requirements relevant to the accepted grade. If preserving the slice outline matters, review the proposed pack, case handling and receiving condition alongside the breakage criterion. Keep an approved sample or documented visual reference where practical, with its identity and storage arrangements recorded.
Review the affected approval fields when the material or process changes. A different preparation route, original cap grade, cutting direction, stem inclusion, cut setting or pack configuration may require another trial. Explain which field changed and which previous results remain applicable. Record the change even when the product name stays the same.
