Choose IQF mango dice by the size your process can handle and the flavor, fiber and shape you need after preparation. A nominal 10 mm or 20 mm cut describes geometry. It does not tell you how sweet the mango will taste, whether the pieces will survive mixing, or how much liquid they will release in your finished product.
Narrow the cut first, compare the proposed maturity and sensory profile in a controlled trial, then write the accepted result into the order specification. Keep frozen appearance and finished-product performance as separate observations. Two bags can look equally firm in the freezer and behave differently once the mango is thawed, blended or folded into a base.
Start with what the mango must do in the finished product
A smoothie manufacturer and a dessert kitchen may buy the same fruit while requiring very different results. The smoothie team may need consistent flavor and smooth blending without troublesome fibers. A dessert buyer may need recognizable cubes that retain their edges during portioning and holding. Each needs a trial that reproduces the intended preparation.
Describe the point at which the mango enters the process. Is it dosed directly from frozen, partially thawed before mixing, or fully prepared before portioning? Name the equipment, the mixing or blending stage and the final serving condition. These details help distinguish a size problem from a maturity, fiber or handling problem when the first trial is reviewed.
Compare the 10, 15 and 20 mm mango dice references against your dosing and presentation requirements. Include chunks, slices or puree in the shortlist when they could meet the finished-product target. Choose the form by its result in the process, then confirm the complete dimensional tolerance for the proposed order.

Write down the failure that would make the ingredient unsuitable. For a yogurt inclusion, that might be too few visible pieces in a serving or fruit that breaks apart during folding. For a smoothie, it might be persistent fibers or an inconsistent flavor after the standard blending cycle. For a topping, it might be excessive liquid collecting around the fruit. Use that failure to choose the observations on the trial sheet.
Where several products share one mango specification, identify their different demands before consolidating supply. A cut that works well in a high-shear blender may be inconvenient in a portioning spoon. Approve a common reference only after checking the requirements of each use.
Define the dice in three dimensions
Ask whether “10 mm dice” means a target of 10 × 10 × 10 mm, a nominal cutter setting, or a commercial size description with a wider distribution. Record all three dimensions and how each is checked. Mango flesh has curved surfaces and natural variation, so a bag should not be evaluated as though every piece were a perfect mathematical cube.
Doubling the cube edge changes its volume eightfold. An ideal 10 mm cube has a volume of 1,000 mm³. An ideal 20 mm cube has a volume of 8,000 mm³. Eight of the smaller cubes therefore occupy the same ideal volume as one larger cube. This is geometry, not a measured claim about the number of pieces in a commercial bag.

At equal density and total fruit volume, the smaller ideal cut creates more individual pieces to distribute. Real portion counts also depend on irregular shapes, breakage, size distribution and how the fruit is handled. Measure serving counts and preparation times in the relevant product and equipment.
Separate off-size pieces from damaged pieces in the specification. A sound piece outside the agreed dimensions and a crushed piece within the same general footprint present different problems. Decide whether acceptance is assessed by mass, count, dimensional measurement or another agreed method. If a piece can enter more than one defect category, define the reporting rule so the totals remain interpretable.
For equipment compatibility, the upper end of the distribution may matter more than the nominal size. Ask the line team which opening, dosing component or transfer step is restrictive, then check the proposed sample against that constraint. A few unusually large pieces may be operationally significant even when the average size looks acceptable.
Request an inspection result that includes the declared cut, sample identity, preparation state and actual off-size finding. A photo beside a ruler can support the discussion, but a single selected cube cannot establish the distribution in a bag. Keep the dimensional review connected to a representative sample and a written acceptance basis.
Judge ripeness after the relevant preparation
Ripeness should describe a useful combination of flavor, aroma, color and texture. “Fully ripe,” “firm ripe” and “semi-ripe” are not interchangeable specifications, and the same phrase can be used differently by suppliers. Ask what observable characteristics define the offered grade and which of them are confirmed on the frozen product or after preparation.
The National Mango Board’s fresh-mango ripening guidance considers several attributes, including internal color, firmness and soluble solids; it also explains that red skin is not a reliable ripeness indicator. That is fresh-fruit guidance. Its stage descriptions and instrument conditions should not be copied into an IQF acceptance limit without a method appropriate to the supplied product.
Assess the mango after the intended preparation as well as while frozen. Record the initial condition, then assess shape, resistance to the intended handling, fiber, flavor and visible liquid at a defined endpoint. Keep the sensory evaluation consistent between samples.

A 2014 study of Nam Dok Mai mango compared maturity stages and pretreatments under controlled freezing conditions. The tested groups softened after thawing, with responses affected by maturity and treatment. It was a single-cultivar study using a chest freezer, not a commercial IQF qualification trial. It supports checking the actual thawed result; it does not establish one preferred maturity stage for every mango variety or application.
Keep sweetness assessment separate from shape retention. A higher Brix result does not establish low fiber, good cube integrity or the desired balance of sweetness and acidity. Also confirm the ingredient and treatment declaration for the offered product. Do not assume that a research pretreatment, another supplier’s formulation or a familiar retail label applies to the proposed order. If the buyer requires 100% mango with no other ingredient, keep that requirement explicit while discussing ways to achieve the target texture.
Match the trial to blending, mixing or visible pieces
Choose the application checks around the outcome you need. The table identifies what to observe before deciding which mango cut deserves approval.

For blending, compare the proposed dice in the normal batch size and equipment settings. Record what remains after the established cycle rather than assuming that a smaller cut guarantees a smoother result. If the product will be fully dispersed, review whether a different mango form could meet the same formulation and handling requirements. That comparison should include pack handling and consistency, not just the unit price.
For inclusions, inspect the fruit at the addition point and again after normal mixing and storage. A piece that survives gentle hand folding may break down in the production process. Conversely, a large firm piece that survives well may be unpleasant or poorly distributed in a small serving. Assess the portion your customer receives, not only the mixing vessel.

For visible fruit portions, note the amount of handling between preparation and service. Scooping, mixing with other ingredients and holding can each affect the appearance the buyer ultimately judges. Use the intended preparation instructions and the product’s confirmed intended-use requirements; an attractive application photograph does not establish that a particular frozen lot can be served without further processing.

If the presentation requires broad pieces rather than small inclusions, include a larger form in the shortlist. Compare its firmness, yield and maturity in its own trial. Record the same finished-use observations so the larger form and diced offer can be judged against the presentation target.
Compare samples on a controlled basis
Use a short trial sheet that another colleague could repeat. Give each sample a code and retain the supplier’s lot reference, form, declared maturity or sensory description, pack details and receipt condition. Record any departure from the planned handling. A delayed or partially thawed delivery may make the sample unrepresentative of the offer you intended to assess.
Keep the starting mass, preparation endpoint, draining arrangement where relevant, recipe, equipment and observation timing consistent. These are trial conditions to agree for the application, not a universal mango thawing protocol. If one sample is fully thawed and another retains a frozen center, their apparent firmness and recovered mass do not provide an equivalent comparison.
Separate the measurements that answer different questions. Total drained recovery measures retained material under the chosen method. Intact-piece recovery measures the material meeting an agreed shape definition. A sample can retain substantial mass while losing the cube appearance required for a topping. Use the appropriate denominator and state whether loose ice, fragments or released liquid are included.
Consider a hypothetical visible-piece trial starting with 1,000 g of mango under a defined preparation method. If 820 g meets the agreed intact-piece description, intact-piece recovery is 82%. If a second sample returns 880 g on the same basis, it is 88%. Those figures describe this illustrative trial only; they are not XMG results, typical yields or suggested acceptance limits.
For a use that accepts only those intact pieces, the ingredient price can be divided by the accepted recovery fraction to compare cost per usable kilogram. At an illustrative price of 2.00 currency units per input kilogram, an 82% recovery gives about 2.44 currency units per usable kilogram. Include any legitimate value of the remaining material separately. Do not count it as waste if another approved use actually consumes it.
Check consistency across the agreed sample coverage. Keep individual results visible before calculating an overall figure. A blended average can conceal a bag that handles poorly. The number of bags and pieces to inspect should follow the purchasing risk and agreed sampling plan, rather than being inferred from this worked arithmetic.
Convert trial results into a purchase specification
An approval such as “good mango, use Sample B” is difficult to carry into repeat supply. Translate the trial into fields that identify the product, the acceptable range and the method of checking it. Retain the sample code and photographs as supporting references, with the written specification explaining what they represent.

Where a numerical limit is needed, establish it from the actual requirement and evidence available for the proposed supply route. Avoid borrowing a chemistry or defect limit from an unrelated product sheet simply because it looks precise. The test method, sample basis and intended use must make that number meaningful for the order.
Distinguish a product specification from a result for an identified production lot. The specification states what was agreed; the lot record reports the checks actually performed. Application approval may involve buyer-side tests that are not repeated on every COA. Identify which routine controls maintain the approved reference and which changes trigger a new application trial.
Use the specification and sampling review to keep screening samples, approval samples and shipment-related checks identifiable. Record whether the reference is an early screening sample or represents the product intended for the order.
Keep repeat orders tied to the approved reference
Preserve the accepted sample details with the specification version and purchase order. If variety direction, maturity selection, cut definition, treatment, packing or the proposed production route changes, review the effect on the characteristics that drove approval. Record the accepted change in the order file before the revised product is supplied.
Make complaints equally specific. Send the lot code, receipt and handling records, the agreed method and photographs showing the issue at the relevant stage. “Too soft” is easier to investigate when the supplier knows whether the observation was made immediately after thawing, after mixing, or after the finished product was held. Preserve comparison samples where your procedures allow.
Review operating changes on the buyer’s side as well. A new blender, different inclusion point, revised recipe or longer holding period may expose a limitation that was absent from the original trial. Recheck the affected outcome before concluding that a previously approved cut and maturity profile still suits the application.
