Seed Fragments and Flesh Integrity in Pitted Frozen Lychees

Inspect pitted frozen lychees with separate records for seed and shell material, flesh shape and texture. This guide explains whole-aril definitions, matched preparation conditions, inspection sequence and the evidence needed to investigate findings without confusing appearance with residue control.

Assess pitted frozen lychee defects on separate records: the shape of the edible flesh, its texture under defined conditions, and any recovered seed, shell or other material. Record the original shape before opening the flesh for further examination. A high whole-fruit proportion does not resolve a seed-fragment finding, and a soft aril is not automatically a broken one.

The specification needs to explain what is being counted, how the sample is prepared and what happens when a finding requires review. “Pitted whole” identifies a product form; it does not supply a complete inspection method. For dessert buyers, this distinction matters because attractive presentation, usable texture and removal of unwanted material are different requirements.

Define what pitted whole means

The edible lychee flesh is an aril. It surrounds the seed inside the outer skin, or pericarp. The UF/IFAS description of lychee fruit distinguishes these structures and notes that some varieties contain small, shrivelled seeds. A naturally small seed is still a seed; “small-seeded” should not be accepted as another way of saying that a product has been pitted.

Commercial terminology also needs translation into observable features. Globalfood’s SIAL listing for IQF pitted lychee describes peeling and seed removal before freezing. Hanofoods’ frozen lychee table distinguishes whole unpeeled fruit from whole stoned or peeled fruit. These are individual product descriptions, rather than shared acceptance rules for every supplier.

Removing the seed leaves an access opening or cavity in the flesh. A definition that treats every visible opening as breakage may therefore reject the intended form. Conversely, calling every piece with a cavity “whole” can conceal large tears or missing sections. Agree how much of the original aril must remain connected, which removal opening is expected and which additional damage changes its classification.

Photographic examples can show a rounded aril with the agreed opening, an aril with a long split, and detached flesh. Those examples need written descriptions. “Resembles the approved photograph” is difficult to apply when the new sample is wetter, more frosted or shown at a different angle. Describe the relevant feature, then use the image to clarify it.

The intended presentation helps establish useful boundaries. A dessert garnish may require a connected, recognisable fruit body. A preparation that will be cut later may place less weight on the same outline. That application discussion concerns shape and usability. It must remain separate from the review of seed, shell or unidentified material.

Also state the measurement basis. Whole arils as a proportion of identifiable fruit bodies, whole flesh by mass and recoverable flesh after a preparation step are different results. A phrase such as “whole percentage” cannot carry all three meanings. Keep detached pieces visible in the record even when the chosen whole-unit calculation cannot assign them to their original fruit.

Keep seed and shell findings separate

Use separate categories for seed material and outer-shell material. The dark seed and the leathery outer skin have different origins, and a recovered fragment may suggest a different point for investigation. Record the observed appearance, whether the material was attached or loose, its location and the basis for identifying it. Colour alone is insufficient to identify every small brown mark inside a lychee cavity.

Where identification is uncertain, retain the item as unidentified material for technical review. Do not force it into a harmless-sounding category to complete the inspection sheet. A photograph may help a specialist examine the finding, but the actual recovered item can contain information that an image loses, including thickness, rigidity and the character of a broken surface.

This is an illustrative reporting structure, not a set of defect allowances. Material of natural origin is not automatically acceptable. In its May 2005 guidance on hard or sharp objects, FDA explains why a component can be unexpected when a label represents that it has been removed, using pitted olives as an example. The guidance has its own scope and exclusions; it does not establish a universal lychee seed-fragment tolerance.

A residue finding should therefore follow the agreed escalation procedure, with a competent assessment of the material, product, intended use and applicable market requirements. Do not average it into a cosmetic whole-fruit percentage. Similarly, a later use that breaks the fruit into smaller pieces does not by itself demonstrate that an unwanted object will be removed or made harmless.

Keep the raw observation alongside any later identification. If an initially suspected seed fragment is identified as another material, preserve that explanation and the supporting evidence. The revised classification should remain traceable to the original finding, sample and report.

Score shape and softness independently

Shape describes how much flesh remains connected and how the fruit body is presented. Texture describes how the flesh responds under an agreed assessment. An aril can remain connected while feeling too soft for a particular garnish. A split aril can still have the texture required for an application that uses cut fruit. Treating “soft or broken” as one undifferentiated defect loses this distinction.

A visual photograph is useful for outlines, openings and visible tears. It does not measure firmness. If the specification includes a texture requirement, define the assessment: a trained sensory comparison, an agreed handling observation or a suitable instrumental method. Each needs sufficiently clear preparation and scoring instructions for another assessor to repeat it.

For an instrumental result, identify the instrument configuration and method rather than recording an unexplained force value. Probe geometry, test location, support, deformation conditions and product temperature can be relevant method details. An opening in a pitted aril also needs consistent treatment when choosing where to measure. A value from one setup should not be given the acceptance limit from a different setup without establishing comparability.

Consider a fictional arithmetic example containing 100 clearly identifiable fruit bodies and no loose pieces. Under the agreed shape definition, 84 are whole and 16 are split. The whole proportion is 84/100, or 84% by count. Under a separate texture assessment, nine of the whole arils and four of the split arils are classified as soft. There are 13 soft arils, and four are both split and soft.

Adding 16 split and 13 soft observations would double-count those four arils if the question were how many fruit bodies have either condition. The number with either condition is 25 in this example. Report the individual categories and their overlap, rather than inventing a combined total. These numbers illustrate recording logic; they are neither acceptance limits nor a recommended sample size.

Real samples may contain detached pieces that cannot be assigned confidently to individual fruit bodies. Do not reconstruct an exact original fruit count from guesswork. Agree whether those pieces are recorded by mass, by a defined piece convention or under another suitable method. State how they affect the denominator and the reported whole proportion.

Match the frozen and thawed examination conditions

A frozen examination and a thawed examination answer different questions. The receiving record can capture packaging condition, the observed frozen state, visible clumps, obvious pieces and the appearance before preparation. A controlled thawed examination can expose surfaces and cavities more clearly and allow an agreed texture assessment. Neither observation should silently replace the other.

A 2025 study by Ning and colleagues compared two freezing methods combined with four thawing methods for seedless lychees, examining texture and drip loss among other outcomes. Its published English abstract supports treating preparation conditions as relevant to quality comparison. It does not provide a universal thawing procedure for every commercial lychee inspection.

Agree the preparation method before comparing suppliers or lots. Record the starting state, selected quantity, container, temperature conditions, elapsed time, defined endpoint and handling between preparation and observation. Where liquid is drained, specify how and for how long. Where it is retained, state that too. An unrecorded change in draining or holding conditions can make apparent yield and texture differences hard to interpret.

Use the same agreed method for the reference and comparison samples. If one sample is still partly frozen while the other is fully thawed, the resulting texture impressions are not directly comparable. Equally, an aggressive separation step that creates tears cannot be treated as an observation of the shape originally received. Record difficulty separating the material and seek the agreed method response.

The procedure must be appropriate to the product and the required food-safety controls. This guide does not prescribe a countertop thaw, a fixed temperature or an elapsed time. Technical staff should establish the preparation needed for the measurement and identify when a sample is unsuitable for continued assessment. A sensory or appearance exercise must not become permission to consume material with unresolved concerns.

An application trial may then use the buyer’s actual dessert preparation. Keep that result labelled as an application result. Failure to hold shape after a particular mixing or holding step is useful information, but it answers a different question from the incoming whole-aril assessment. Linking the two records is more informative than changing the receiving grade to describe the finished dessert.

Record the sample before opening the flesh

Start with the sample selected under the agreed lot inspection plan. Identify the lot, selected packages, collection locations, collection time and handling. Record how much was actually examined. A carefully chosen display tray is useful for discussing shape, but it cannot represent a lot merely because the fruit looks typical.

Preserve the sequence of observations. First record the relevant as-received condition. Prepare the sample according to the agreed method, then score its original shape and any visible findings. If further examination requires opening the arils, do that after recording the shape that existed before the opening. A cut or tear made by the examiner must not become received-product breakage.

The method must say whether all selected units, a defined subset or another prepared fraction receives the additional residue examination. Keep those quantities distinct. If 100 units receive the shape assessment but only a separately selected portion is opened, the report must identify the coverage of each check. Do not present the opening examination as covering the full quantity by association.

Record loose material recovered from the selected contents as well as findings attached to flesh. Avoid discarding liquid, fines or packaging-associated material before deciding whether the method includes them. If a fraction is excluded under the agreed procedure, identify that exclusion. A report of no findings has meaning only within the material and examination actually covered.

For each relevant finding, keep a contextual photograph and a closer view with a usable scale where dimensions matter. Assign an identifier that links the image, specimen and observation sheet. Retain the recovered material under the appropriate handling procedure. An image filename alone is a weak link if it does not identify which sample or package supplied the item.

Note whether the material was visible before opening or became visible during the examination. If handling breaks a recovered object, retain the association between the pieces and document what happened. The resulting piece count should not imply that the same number of separate fragments was originally present in the delivered product. Record uncertainty where the original state cannot be reconstructed.

A follow-up investigation may use additional samples or a different examination method. Label it accordingly and retain the initial result. The absence of findings in a later sample does not erase the first observation or prove that the lot contains none. The agreed decision procedure should specify who reviews conflicting observations and what information is needed before disposition.

Investigate the process with linked observations

When findings require investigation, ask questions that can be answered from the relevant production and inspection records. Confirm the product form, incoming fruit characteristics, peeling and pitting arrangements, separation of removed material, subsequent handling and the checks actually applied. These are investigation headings, not a description of a particular XMG partner factory’s equipment.

Seed fragments, shell pieces and flesh damage should lead to distinguishable lines of enquiry. A seed-related observation calls for examination of removal and separation information. Shell material raises questions about peeling and subsequent handling. Flesh breakage may require looking at the condition entering a step as well as what leaves it. The finding identifies a question; it does not prove a cause.

For example, a fictional investigation might find more torn flesh after a transfer point than before it. That comparison becomes useful only when the collection method, product condition and classification are comparable. Samples from different raw-material lots or different preparation methods cannot isolate the effect of the transfer point. Record those differences rather than attributing all damage to the equipment.

Ask what supports any proposed control. A statement that a line uses inspection equipment does not establish its performance for the relevant seed or shell material. Evidence should match the product presentation, material characteristics and operating conditions. Likewise, additional manual sorting requires a defined procedure and an assessment of effectiveness; simply adding another check does not quantify the residual risk.

Close the specification with the agreed product definition, separate observation categories, measurement units, sample selection, preparation method, acceptance criteria and escalation responsibility. Attach dated photographic examples for the features they genuinely clarify. Preserve any unresolved identification or method question until the responsible technical parties have addressed it.

Agree the acceptance rules before assessing the commercial lot. A preferred sample result should not become the reason for choosing a more convenient denominator or redefining a split. If a definition needs revision, document the change, why it was made and how the existing observations are treated under the revised agreement.

When a process or product change is proposed, establish which requirements need renewed verification. Better whole-aril yield would not by itself demonstrate better seed removal. Improved removal evidence would not necessarily establish the texture required by a dessert customer. The useful conclusion connects each requirement to its own evidence and records the decision for the actual order.
