Assess core content in frozen pineapple chunks against a written tissue definition, the actual purchased style and an agreed measurement basis. A percentage of chunks containing core is different from the mass of those whole chunks or the mass of core tissue removed from them. Evaluate fibrous eating texture separately in the intended recipe, then record the usable fruit recovered after any trimming.
“Cored” describes preparation; it does not, by itself, define an inspection result. Buyers need to know what counts as residual core, how the sample is prepared and which result determines acceptance. A photograph of yellow chunks or a low core percentage cannot answer every question about cooked bite and production yield.
Identify core tissue without using colour alone

Pineapple flesh surrounds a central fibrous core, as described in the UF/IFAS pineapple identification guide. Once the fruit has been cored and cut, the inspector sees individual pieces rather than an intact fruit. A remaining strip near a former core boundary may be less obvious than a complete central cylinder.
Use a product-specific reference that shows the tissue being classified. Include clear cut-face photographs and retained comparison material where appropriate, with the preparation state recorded. Mark the actual region of interest on the inspection photograph and explain why it meets the agreed definition. A generic anatomy illustration helps locate the core but cannot serve as an approved borderline specimen.
Do not classify every pale area as core. Colour can vary across a piece, and frost or lighting can obscure the surface. Examine the tissue structure and its relationship to the cut face under the agreed preparation conditions. If firmness or resistance to cutting is part of the definition, specify how that observation is made. Different knives, orientations and sample temperatures can otherwise change the assessment.
Keep three questions distinct: whether a piece contains identifiable core tissue, whether its texture is objectionably fibrous, and whether it meets the intended use. A buyer may define both a residual-core criterion and a prepared-product texture criterion. One can fail while the other passes. The word “fibre” in a physical defect table also needs explanation; this inspection does not measure nutritional dietary fibre.
External hard material belongs in a separate finding category. An unknown hard fragment should not be renamed “pineapple core” simply because it was found among pineapple pieces. Preserve its identity and follow the relevant foreign-material procedure; do not use tasting to identify it. A core-content allowance cannot be used as an allowance for glass, metal, stone or other unrelated material.
Have assessors compare the same reference pieces before they inspect separate samples. Record disagreements and resolve the tissue boundary while the material is still available. If one person trims only the dense centre and another removes a broad band of surrounding flesh, their reported core masses will differ even when they examine the same chunk. That is a method-definition problem before it is a supplier comparison.
Read the requirement for the actual pineapple style

Read the complete clause that applies to the purchased form. The USDA frozen-pineapple grade standard, effective January 25, 1949, separates whole slices, tidbits, crushed pineapple and chunks within its character requirements. The numerical core-material and fibrous-stock provisions for certain other styles should not be copied into a chunk specification.
In that standard, the relevant chunk clauses describe ripeness, fruit structure and greater removal of fibrous portions around the core hole. They are separate from the numerical provisions for whole slices, tidbits and crushed pineapple. This distinction matters even within one document. A percentage found under a nearby heading does not become the limit for every pineapple style.
The document concerns a voluntary grading framework, and a complete grade involves more than core. It also specifies a grading preparation state in which the units can be separated after thawing. That condition is not a cooked-texture trial. If a contract invokes a grade or method, identify the applicable document, style and version and review the complete requirements rather than adopting one attractive number.
Commercial specifications add another layer of terminology. Frucom’s chunk sheet, issued October 10, 2023, includes a percentage entry called “Heart” alongside defects reported in units. Superior Food Services’ diced-pineapple sheet, revised March 28, 2024, explicitly describes its fibre entry by weight. These are individual commercial documents, not XMG limits or universal trade rules.
Neither a familiar defect name nor a percentage sign completes the method. Ask whether “heart” means identifiable central core, a wider fibrous region, or any piece failing an agreed texture reference. Then ask whether the result weighs isolated tissue or entire affected pieces. A statement of “by weight” settles the type of unit but may still leave the material being weighed uncertain.
Connect any numerical requirement to its source and contractual role. Distinguish a requested customer criterion, an invoked grade requirement and a supplier’s proposed operating target. The parties should agree which controls the order and how conflicts are resolved. Do not average different limits or quietly choose the least restrictive wording when documents describe different products or methods.
Choose what the core result measures

The supplied pieces include different forms. Define which units enter a count before cutting or trimming the inspection sample.
Define the lot and the sampling plan before sorting visible pieces. Identify the packs selected, the increments taken, the sample mass and the number of original units examined. Preserve pack-level results where distribution matters. A carefully selected handful of large or conspicuous pieces does not represent the sample that a random or otherwise agreed plan would produce.
Set the sample state and drainage basis. Record how units are separated, whether released liquid is retained, and when weighing occurs. If the agreed denominator is prepared fruit solids, keep that definition throughout the calculation. A mass that includes loose ice or packing medium cannot silently become the denominator for a method defined on fruit solids.
The following fictional inspection example uses 1,000 g of prepared pineapple solids containing 80 defined original chunks. Eight chunks meet the agreed core-tissue definition. Those eight whole chunks weigh 125 g; careful trimming recovers 28 g classified as core tissue. These invented values illustrate measurement choices, not an acceptance limit or an XMG inspection finding.

All three results can be correct for the same sample. They answer different questions. The 12.5% result includes the flesh attached to the identified core in those chunks; it is not the mass of core tissue alone. The 10% count result gives every defined chunk one vote, regardless of its individual mass. Neither should be relabelled as the 2.8% tissue result.
Retain the original unit count before cutting or trimming. Dividing one affected chunk into several fragments should not increase the number of original affected chunks. State how already broken pieces enter the unit definition and what happens when the original piece cannot be reconstructed. Do not invent an original count by combining unrelated fragments after inspection.
Record the scale identification, tare, weighing sequence and suitable resolution. Keep the tissue and other removed fruit separate so that excess flesh is not automatically counted as core. If material is lost during handling, record the discrepancy. A precise-looking percentage cannot repair uncertain tissue classification or an undocumented denominator.
When combining sample results, preserve their underlying counts and masses. Calculate an overall count proportion from the total affected units and total examined units; calculate a mass proportion from the corresponding total masses. An unweighted average of percentages from unequal samples can give a different answer. Keep the individual results available so a concentrated problem in one pack remains visible.
Assess fibre in the intended cooked product

Conceptual matched trial: A and B identify candidates. The repeated pans and unnumbered scale show no measured dose, cooking settings, texture difference or safety result.
A physical core inspection and a cooking trial should remain identifiable stages. Use representative material for the application trial and record any sorting or trimming performed before cooking. If only selected tender-looking pieces enter the recipe, the result describes that selected material. It cannot establish how the supplied mix performs when the customer uses it normally.
Choose the actual application, such as a pineapple-containing sauce for a prepared meal, and preserve its recipe. Record fruit dose, other ingredient masses, starting state, equipment, batch size, loading order and the controlled cooking conditions. Compare candidates using the same method and the same intended serving state. An unspecified instruction to “cook until soft” leaves too much room for each assessor to change the test.
Follow the product’s permitted preparation and the established food-safety process for the application. The purpose here is to assess quality within that process. Extending a cook to improve bite is a process change that needs review; a sensory result does not establish the adequacy of a safety treatment or a safe holding period.
Describe the eating qualities separately. Useful observations include initial resistance to biting, persistent stringy material, ease of breaking the piece down, juiciness and retention of recognisable fruit shape. A general “hard” score can conceal a difference between a firm but clean bite and fibres that remain after the surrounding flesh has broken down. Agree which distinction matters to the finished product.
Use coded samples where practical and vary presentation order to reduce expectation effects. Have assessors describe the attribute before deciding acceptance. If a retained reference is used, record its identity, age and preparation history. A reference stored for a different period or repeatedly thawed may no longer represent the originally approved texture.
Repeat with independently prepared portions and record the fruit lots. Several observations on one cooked bowl can help describe that bowl, but they do not show repeatability across preparation runs or incoming packs. If an instrumental texture test supports the decision, document its fixture, piece geometry, orientation, temperature and settings rather than comparing unexplained force numbers.
Do not assume that additional cooking will solve every fibrous-texture problem without consequences. Test the proposed adjustment and examine the complete dish, including fruit shape, sauce and released liquid. The useful outcome is a demonstrated combination of ingredient and process. It is not a universal cooking time for all pineapple cultivars, chunk sizes and recipes.
Keep trimming loss separate from usable yield

Conceptual recovery categories. Container sizes and illustrated quantities do not represent the fictional mass balance in the text or a measured production yield.
Residual-core mass is only one part of recovery. A trimming operation may also remove acceptable flesh, create pieces too small for the intended presentation or release liquid. Define the saleable or usable output first: intact chunks meeting a particular shape requirement, fruit suitable for a sauce, or another explicitly described fraction. The same material can have different utility in those applications.
Continue the earlier fictional 1,000 g sample through a hypothetical finishing trial. Suppose the recorded outputs are 900 g of acceptable chunks, 28 g of core trim, 42 g of other fruit removed and 30 g of released liquid. These four masses total 1,000 g. The example assumes complete recovery and weighing of all fractions; actual work must record any unexplained difference.
Usable chunk yield is 900 ÷ 1,000 × 100, or 90%, on the stated input basis. Core trim remains 2.8% of that input. It would be incorrect to report usable yield as 97.2% merely by subtracting core tissue from the starting mass. The additional fruit removed and liquid also affect the recovered chunk output.
Likewise, discarding all eight affected original chunks would remove their entire 125 g in the inspection example. That is a different operation from removing 28 g of identified tissue. Compare the actual proposed work, including the resulting shapes, handling effort and recovery. A theoretical amount of flesh left after trimming does not prove that it meets the customer’s final cut requirement.
Keep other possible uses visible without assuming they are equivalent. FAO’s discussion of pineapple juice processing describes core and other fruit streams entering further processing, with finishing and separation operations. That processing context does not establish their suitability as visible chunks or guarantee recovery in another plant. A useful juice input and an acceptable dessert chunk are different product decisions.
When comparing quotations, use a common output definition and preparation basis. Record recovery alongside the ingredient price and the work required to obtain the usable fruit. A cheaper delivered kilogram can require more trimming or produce fewer acceptable pieces. Conversely, a stricter trim may add little value in an application that has demonstrated suitable performance with a different agreed form.
Keep the trial scale and its limitations in the record. Hand trimming a small tray can reveal the nature of the issue, but its recovery and labour observations do not automatically describe a continuous production line. Confirm the proposed production method and assess whether the trial represents the actual handling, throughput and downstream cut requirements.
Write the method and acceptance decision together
The final agreement should allow another trained person to reproduce the inspection. State the pineapple style, the residual-core or fibrous-tissue definition, the reference images, the original-unit rule and the sample preparation. Include the sampling plan, calculation, reporting precision and acceptance criterion on the same controlled method or clearly linked documents.
Define how borderline pieces and assessor disagreements are handled. Preserve photographs, the original classification and any agreed reassessment. Do not replace an unfavourable result with a new denominator or trim definition after seeing the sample. If a method changes, identify the new version and determine whether earlier results remain comparable.
Connect the physical result with the intended application approval. Keep the cooked-texture observations and the recovery trial under their own method references, with the recipe and preparation conditions attached. This allows the team to understand whether a rejection concerns residual tissue, eating texture, usable output or more than one requirement.
Identify changes that require review, including cut form, coring or trimming approach, relevant raw-material characteristics and the intended cooking process. Keep sample identity, lot references and approval dates connected to the signed specification. The aim is a repeatable decision about the product being supplied, with enough detail to investigate a different result when the next lot arrives.
