Design a frozen berry blend around the finished product: a smoothie needs the right flavour, colour, flow and seed sensation after blending, while a visible topping needs recognisable fruit and an acceptable appearance through its intended display period. Write the fruit composition by mass, specify each component’s form, and test candidate blends in the actual base and preparation process.
A blend approved for one use needs a separate assessment for the other. An attractive frozen mix can produce an overly seedy drink, and a pleasant smoothie can contain fruit that does not retain the required shape on a dessert. The useful specification connects the chosen recipe with the observations that determine success.
Define the end use before the ratio

Four berry forms are visible in this original product photograph. Their arrangement is a form reference, not a measured recipe or portion guarantee.
Start with a short product brief. For a drink, identify the liquid or spoonable base, intended serving texture, fruit dose, preparation equipment and expected time between preparation and consumption. For a topping, identify the food underneath the berries, the portion arrangement, preparation state and intended display conditions. A berry topping on white yogurt has different visual questions from fruit enclosed in a dark compote.
Also state whether the fruit will remain frozen, be partially thawed or reach another defined preparation state. That decision must follow the product instructions and the applicable food-safety requirements. A quality comparison cannot establish that a product is suitable for consumption without a required preparation step. Confirm the permitted use before organising tasting or display trials.
The name “mixed berries” leaves much of the recipe open. Dole’s Triple Berry product lists blueberries, blackberries and raspberries and describes both smoothie and topping uses. KD Healthy Foods’ mixed-berry listing describes combinations that can also include strawberry and blackcurrant. These individual product descriptions illustrate the range of meanings; they do not establish an ideal composition for your application.
Name the component form as well as the fruit. Whole strawberries, strawberry dice and strawberry puree are different inputs even when their mass contribution is identical. A raspberry component also needs its whole/broken or other agreed form. Otherwise a nominally unchanged fruit percentage can conceal a change in the appearance, dosing behaviour or texture of the material supplied.
Separate essential outcomes from preferences. A topping program may require a recognisable raspberry in the presentation, while a drink developer may accept raspberry character without preserving its original shape. If a particular fruit must appear in every finished portion, record that requirement separately from the average mass recipe. A bulk formulation alone does not demonstrate the composition of each small serving.
Use these priorities to choose the trial questions. Colour, flavour, seed sensation, flow, fruit shape, released liquid and preparation effort can all matter, but they need not carry equal weight. Decide which outcomes can prevent approval before seeing the samples. This makes a later trade-off understandable rather than allowing whichever sample looks most attractive first to set the criteria.
Choose colour and flavour in the finished base

Conceptual ingredient combination. The illustrated colours and quantities are not a calibrated mixing prediction, recipe, pH effect or measured stability result.
Assign each proposed fruit a role to investigate: a recognisable flavour, a red or dark-fruit visual identity, an acidity contribution, or a visible contrast with the other pieces. Treat those roles as hypotheses for the actual material. Cultivar, maturity, product form and preparation can change the result, so a fruit name should not be used as a fixed colour strength or sweetness value.
Assess colour after incorporating the blend at the intended dose. Looking at a bowl of separate frozen berries does not show the appearance of a drink containing those berries. The base, amount of fruit, particle distribution and preparation affect what the observer sees. A white dairy base and a clear beverage base need their own reference products, even when both use the same frozen blend.
A 2023 study by Ścibisz and Ziarno examined strawberry, raspberry and blueberry smoothies with different yogurt additions during refrigerated storage. The researchers used prepared fruit purees with apple juice and apple puree; the berry materials had been heated, pulped, homogenised and pasteurised. Their findings concerned those formulations and conditions. They support examining the complete fruit-and-base system rather than predicting stability from the berry name alone.
That study is not a recipe for blending whole IQF fruit, and its storage period does not validate a commercial drink’s shelf life. It also does not justify assigning every observed colour change to pH. For development work, record the actual formulation and relevant analytical measurements, then compare the appearance over the intended use period under the agreed conditions.
Keep visual records comparable. Use the same sample container, fill depth, background, lighting and camera settings for photographs, with a suitable reference in the frame where needed. A differently exposed image can make a sample look lighter without a formulation change. If an instrumental colour method is part of approval, preserve its sample preparation and measurement settings alongside the result.
Evaluate flavour in the same finished base and serving state. Record sweetness, acidity, characteristic fruit flavour and any unwanted note separately. A single “good flavour” score gives little direction when a candidate needs adjustment. Ask assessors to describe the change that matters, such as insufficient raspberry character or excessive tartness for the intended base, rather than choosing a fruit percentage from colour alone.
Account for seeds, skins and fragile fruit

Raspberry cavities and the different berry surfaces are visible in the product sample. Seed sensation and shape retention require their own prepared-product assessment.
Whole-fruit texture includes more than the original berry shape. Seeds, skin fragments and fibrous material can remain perceptible after the flesh is dispersed. Define the intended drink style: a rustic fruit texture may be welcome in one product, while another needs a much finer sensation. “Smooth” should refer to an agreed sensory outcome under the actual preparation conditions.
Do not equate a higher blender speed or longer cycle with a seedless ingredient. If seed sensation remains unacceptable, investigate the component form and a suitable refining route as well as the recipe. A separately specified puree can be an option to evaluate, but its preparation, seed-control description and performance still need confirmation. The change also alters the input being purchased.
The USDA’s February 2022 frozen-fruit procurement specification treats finished berry purees separately from whole berries, including a finishing stage and consistency description. This is a specific procurement document, not a universal smoothie specification. Its distinction is useful: a defined refined form answers a different question from simply breaking whole fruit into smaller pieces.
When trialling a refining or straining step, retain the input, accepted output and rejected fraction records. The material removed may include flesh as well as seeds or skins. Compare the finished drink at a clearly stated fruit basis; otherwise a smoother sample may also contain less fruit or a different liquid balance. Any such step should fit the intended process and approved formulation.
For visible toppings, examine each component after the agreed preparation and holding conditions. Record loss of recognisable shape, detached pieces, skins, released liquid and ease of transferring the fruit onto the product. Avoid assuming a fixed order in which berry species will soften. The particular cultivar, form, maturity, freezing history and handling conditions need to be represented in the trial.
Oregon State University Extension’s freezing guidance describes preparation, packaging and freezing conditions as factors affecting quality and distinguishes unsweetened from sugared fruit packs. Its context is household preservation. It reinforces the need to identify the actual input; a sweetened preparation is not an interchangeable reference for an unsweetened IQF blend.
Keep component observations even if the finished blend receives one overall score. If a presentation fails because one fruit collapses during transfer, changing every percentage at once makes the next trial difficult to interpret. First determine whether the issue concerns the fruit form, its handling, its contribution to the recipe or the presentation requirement itself.
Compare blending with visible presentation

Illustrative use comparison, not a preparation recipe or a consumption-safety assessment. Blending disperses the fruit; visible presentation retains a shape requirement. The scenes show no measured trial results.
Blending intentionally changes the fruit’s physical form. Assess what matters after that change: circulation during preparation, remaining particles, flow or spoonability, flavour and colour. Whole-fruit appearance may still be important for the supplied ingredient or portion pack, but it is not a substitute for evaluating the drink that the customer receives.
A topping preserves a different set of features. Examine whether fruit remains recognisable, how it sits on the base, whether liquid pools around it and whether the surrounding food changes appearance. Include the intended portioning tool and placement step. A carefully arranged laboratory photograph can hide breakage caused by the normal scoop or transfer operation.
Colour migration should be judged against the product concept. The USDA’s February 2022 mixed-berry cup requirements explicitly address colour transfer from blueberries into strawberry pieces within that particular procurement product. That is evidence of an application-specific judgement, not permission to transfer its allowance to another dessert. A pink halo may be acceptable in one presentation and inconsistent with another.
Keep the display period visible in the trial record. Photograph and assess the product at preparation and at the agreed later observations, recording the relevant product and holding conditions. An appealing initial topping does not answer how it looks when actually served. Those observations assess quality; they do not set a safe holding time or replace a shelf-life assessment.
Released liquid can have different consequences in the two uses. It may remain intentionally within a drink formulation, while a topping process may drain some liquid before placing fruit on the base. State that choice and record the resulting dose. A comparison becomes misleading if one candidate includes all released liquid and another is drained without documenting the difference.
Keep separate conclusions for the applications. A blend can meet the drink target yet need a different component form or proportion for the topping. If one stock item is intended to serve both, approval should show that it meets both sets of requirements. A convenient purchasing arrangement should not conceal an unresolved presentation or sensory problem.
Run both candidates through both application trials

Conceptual trial arrangement. A and B are candidate identifiers, not grades. Repeated product icons mark the four comparisons; they do not display the hypothetical recipes or predict equal performance.
Begin with a small number of clearly identified candidates and keep their component specifications stable. The following fictional development formulas illustrate a controlled change. They are not recommended commercial recipes, XMG standard blends or measured production results. Each column describes the mass of frozen fruit components before application preparation, with no added packing medium.

Candidate B exchanges 100 g of raspberry for 100 g of blueberry while keeping the other component masses fixed. The comparison tests the effect of that exchange in the finished products. It cannot isolate a pure “blueberry effect” independently of the reduced raspberry contribution, and it does not predict which candidate will perform better.
Run A and B through the same smoothie method, then run both through the same topping method. Testing A only as a drink and B only as a topping confounds the recipe with its use. The four combinations allow the team to compare candidates within each application and decide whether a single formulation can serve both.
For the smoothie trial, record fruit and base masses, starting state and temperature, loading order, equipment and vessel, selected program or settings, preparation duration, final product temperature and recovered output. Use the same intended serving state for the sensory comparison. Record any intervention, such as extra liquid added to restore circulation, because it changes the product being assessed.
For the topping trial, use the same fruit preparation, drainage decision, base, fruit dose, placement method and container. Keep the holding conditions and observation points matched. Score shape retention, visible fruit identity, released liquid and colour migration separately. Record whether the fruit can be transferred by the normal service method without additional damage.
Use coded samples where practical and balance their presentation order so that assessors are not guided by a preferred recipe name. Repeat the comparison with independently prepared samples. Record the component lots and the variation observed; repeating a score on the same prepared cup does not demonstrate repeatability across preparations or incoming fruit lots.
If a trial needs revision, make the change explicit. Altering raspberry form, base sweetness and blender conditions together may improve the drink but leaves the cause uncertain. Where the purpose is to understand a particular change, hold the other relevant conditions stable and preserve both versions. A development decision should explain what improved, what remained acceptable and what still requires evidence.
Keep the approved formulation version connected
After selecting a candidate, connect its component list and mass percentages with the actual forms, grades and preparation assumptions used in the trial. Attach the application method, sensory observations, colour reference and relevant photographs to that version. An approval email saying only “mixed berries accepted” cannot preserve the recipe that produced the accepted drink or topping.
Keep the fruit-blend recipe separate from the complete finished-product formulation. Adding yogurt, juice, sugar or other ingredients changes the full recipe and the information needed for label review. The ingredient statement and any claims need to be checked against the approved product and destination requirements. A list of fruit names is not a substitute for that review.
Identify changes requiring reassessment: fruit identity, component form, permitted ratio range, an alternative cultivar or source where relevant, preparation conditions, base formulation and the finished product’s intended use. Some changes may be covered by evidence already obtained; others need new trials. Record the reason for the decision rather than assuming that an unchanged product name means unchanged performance.
Formula approval and production verification remain separate tasks. The development trial establishes the candidate and application requirements. Production and lot records must then demonstrate the agreed component inputs and distribution using a suitable sampling and measurement method. Any application of that approach to berries must account for fruit fragility, released liquid and identifiable component fractions; a favourable smoothie result cannot replace the required ratio evidence.
Retain the accepted comparison material according to the agreed reference-sample arrangements and identify its age and storage history. A reference can change during storage, so its condition needs consideration when it is used later. The written formula, method and recorded observations should remain available even when the original sample is no longer a suitable comparator.
