Red drupelets in a frozen blackberry sample are a colour observation, not proof of one particular handling failure. A berry may have been red before processing, may have changed colour after harvest, or may look different under frost, lighting and sample preparation. Red drupelet reversion specifically describes a change from black to red after harvest. Without an earlier observation, the most defensible receiving description is the colour you can actually see.
For a useful acceptance decision, define three things before counting: which appearance is objectionable, whether you are examining frozen or prepared fruit, and what the percentage measures. The proportion of berries with any red drupelet is different from the proportion of red drupelets or the mass of fruit classified as discoloured. A supplier and receiver can inspect the same tray carefully and still report different results if those definitions differ.
We start a blackberry colour discussion with the intended use and the sample reference. A whole-fruit topping may need a different appearance from a crushed ingredient. That commercial choice should be recorded alongside the applicable specification; it does not establish the cause of the colour or clear a lot for food safety.
Describe the colour before naming the cause

A blackberry consists of many small drupelets. Look at both the complete fruit and the distribution of colour over those small units. Isolated red drupelets, a compact red patch and a largely red berry are three different observations. Record them separately when they affect presentation differently. Calling every red unit “unripe” or every red patch “temperature damage” inserts a cause that the photograph has not demonstrated.
Begin with neutral notes: dark fruit with a small red patch on one side, scattered reddish drupelets, or extensive red colour over the visible surface. Describe the extent of frost and whether the berry remains intact. Where a broken surface is visible, identify it separately from a change in skin colour. A close photograph of a cut or crushed surface is not directly comparable to an intact skin reference.
For a new requirement, put representative examples in front of the people who will inspect the material. Ask each person to sort them using the proposed description. Disagreement over borderline berries is useful information: the definition needs work before it becomes a contractual number. Keep those difficult examples in the reference set, rather than choosing only the easiest acceptable and unacceptable extremes.
Colour intensity alone also leaves the viewing conditions unresolved. A red patch may be obvious in one photograph and much less visible in another. If an image arrives without its sample state, lighting and identity, use it to request a closer review. Do not convert its appearance directly into a batch rejection percentage.
What fresh-fruit research can and cannot establish
Fresh blackberry research supports more than one influence on red drupelet reversion. The University of Arkansas study by McCoy and colleagues found differences associated with genotype and harvest time; its second storage-temperature study did not find significant effects. Yin’s subsequent thesis also reported an interaction between genotype and harvest time. Those findings make cultivar and harvest records relevant questions. They do not provide a universal red-colour limit for frozen berries.
A controlled impact study by Edgley, Close and Measham found that mechanical injury and temperature conditions influenced subsequent colour change. The fruit were deliberately injured and assessed under stated experimental conditions. An incoming frozen lot has a much longer and less completely observed history. Seeing a similar colour at receipt does not establish that it experienced the same treatment.

Illustrative histories, not lot records. An earlier and later observation may document change; a received red patch alone cannot establish its starting colour or the cause.
The difference between a possible explanation and a diagnosis matters commercially. A documented pre-freezing photograph showing black fruit, followed by a matched later sample showing red patches, supports investigation of a change between those observations. It still does not isolate which event caused the change. A single photograph of received fruit establishes even less: there is no observed starting colour to compare.
University of Georgia guidance places red reversion among fresh-fruit postharvest issues and discusses handling and cooling. NC State also distinguishes processing suitability, including maintaining colour after freezing, from fresh-market cultivar choices. We use those sources to frame questions about material selection and handling. Their fresh-market cooling guidance should not be repurposed as a reason to delay a frozen product’s required temperature control.
Keep research figures out of the acceptance clause unless the applicable method and product have actually been agreed. A temperature, interval or percentage from an experiment describes that experiment. It is not automatically a shipment tolerance, a corrective action, or proof that one origin or cultivar will perform identically in your application.
Keep frozen and thawed observations separate
Choose the state that answers the commercial question. Frozen appearance matters for an IQF retail presentation and a receiving check. Prepared appearance matters when a berry will be used after thawing or cooking. Both can be useful, but they should have separate records. A supplier’s frozen reference and a receiver’s drained, thawed sample are not two measurements of the same defined condition.

Before opening the sample, record its identification, pack condition and the method used to obtain it. Photograph the frozen material promptly under the agreed inspection conditions. If a prepared evaluation is also required, record that method before starting: amount, container, handling conditions, endpoint and whether liquid is retained or removed. Follow the product’s handling instructions and your applicable quality procedures. The colour guide itself should not invent a thawing or cooking safety method.
A paired record can show what one identified sample looked like at two inspection stages. Keep the original image files and their order. Explain whether the exact same berries were followed or whether separate portions were used. With separate portions, a different proportion of red berries could reflect sampling as well as preparation. Calling that difference “colour change” without this distinction would overstate the comparison.
Frost creates an additional practical problem: the observer may not see enough skin to assign a confident category. Do not rub, rinse or thaw selected berries informally just to produce a clearer photograph while the rest remain frozen. Those actions change the basis of the inspection. Record an unassessable category or apply the separately agreed preparation method to the defined sample.
The original product photographs here show visible fruit form and colour variation. They are not a paired experiment, a defect standard or a record of a diagnosed temperature excursion. For your own approval, replace general illustrations with identified sample references that both parties have examined under the same conditions.
Choose the counting unit before setting a limit
The word “percentage” needs a numerator and a denominator. Whole-berry incidence answers how many inspected berries meet the agreed affected-berry definition. A drupelet count answers how many individual drupelets are classified as red among those assessed. A mass fraction weighs the berries or material assigned to a defect category. None of these can be substituted for another simply because all results use a percent sign.

Hypothetical counting example: two of ten berries means 20% affected berries in each tray. The coloured units show different severity; the example does not calculate a drupelet percentage or prescribe a tolerance.
Consider a hypothetical comparison of two ten-berry trays. Tray A has two berries with one red drupelet each. Tray B also has two affected berries, but each has six red drupelets. Both trays have 20% affected berries by count when “any red drupelet” is the definition. They have visibly different severity. The drawing makes no claim about total drupelet percentages, because the total number of assessed drupelets has not been specified.
The reverse problem arises when berry sizes differ. Two large affected berries and two small affected berries count as two in each sample, but their masses may differ. A count result therefore does not establish a mass result. If the contract uses mass, preserve the actual weighing record. Do not estimate it from the fraction of circles highlighted in a photograph.
For whole-fruit presentation, a practical starting point is an affected-berry count combined with a few well-defined severity categories. That is a proposed working approach, not a mandatory grading system. If the buying programme already specifies another method, follow that method and resolve any ambiguity before applying it. Separate broken material where a whole-berry denominator cannot meaningfully include it.
Also retain the result for each sampled unit. Combining all berries into one tray can hide differences between packs. A composite may answer a useful question, but it cannot later reconstruct which bag contained the observed pattern. The sampling plan should state how units are selected and how individual and combined results enter the decision; no universal sample size is established by the example above.
Build a photographic guide both sides can use
A useful reference set controls the view as carefully as the wording. Use a neutral background, consistent diffuse illumination and a fixed camera position. Include an appropriate neutral reference and a scale where size affects interpretation. Keep the berry surface in focus and avoid clipped highlights that erase the difference between frost and skin. Record these choices so the next session can reproduce them.

Photograph the sample overview first, then the selected category examples. The overview explains how the close views relate to the assessed material. Close-ups alone can exaggerate the prominence of a small minority or omit the less attractive part of a sample. Label each example with its sample identifier and inspection state, rather than a conclusion about the supplier or the cause.
For rounded berries, agree how much of the surface must be inspected. A single top view does not show the underside. A repeatable method might use two defined orientations for each category example, while the actual lot count follows an agreed complete-surface check. Explain whether the pictured category describes one visible face or the whole berry. Do not report a two-dimensional image area as total three-dimensional surface area.
Use the same reference version at origin and destination. The file should show its revision, the criterion each example illustrates and the people approving it. If a revised guide changes a borderline category, record the change explicitly. Quietly replacing the pictures while leaving the numerical limit unchanged can alter what the limit means.
Test the guide on material that was not used to create it. Have two reviewers classify the same samples independently, then compare disagreements. If they repeatedly disagree on one colour transition, improve that definition or require a second review for that category. Do not solve a weak reference by asking the inspectors to be more careful while leaving the decision rule unchanged.
Screens, printers and camera processing can change appearance. A reference file is useful for communication, but it should be checked against the actual retained or approved sample wherever the decision requires that level of confidence. Preserve the original files and avoid filters, selective colour edits or messaging-app screenshots as the sole master reference.
Trace the observation through the lot records
Once the appearance has been recorded consistently, review the history that could explain it. Connect the receiving sample to its lot, production date, declared material and relevant retention record. Identify which comparison sample came from that lot and which was only an earlier indicative sample. A good-looking sales sample cannot establish the condition of a later production lot.
Ask for the evidence that can change the decision: material and harvest information where available, pre-freezing observations, relevant handling or processing records, frozen storage and transport records, and the receiving conditions. Availability and scope will differ. A missing earlier photograph is a gap in the colour history; it is not evidence that the earlier fruit was black.
Temperature records need their own reading. Identify the device, its position, the period covered and what it measured. An air reading at one location is not a measurement of every berry. Match the time period to dispatch, transfer and receipt records, and preserve the original export where possible. A screenshot with no device identity or time basis can leave the relevant part of the journey unresolved.
Compare separate questions instead of asking one photograph to answer all of them. Did colour meet the agreed appearance criterion? Is there evidence of a change between identified stages? Do records show a handling deviation? What action does the quality procedure require? The answers can differ. A lot can fail a contractual colour criterion without a proven cause, and a satisfactory colour sample does not cancel a documented handling concern.

Write the acceptance decision without changing the evidence
An acceptance clause should connect a defined sample state, defect definition, reporting basis and decision rule. “Good black colour, minimal red fruit” leaves all four open. “Maximum red percentage” adds a number without repairing the missing denominator. Use the language your inspectors can apply consistently and keep the approved visual reference attached to the same specification version.
A working clause might read: “Assess the defined whole-berry sample in the agreed frozen inspection state. Classify colour against photographic reference revision [identifier]. Report the number examined and the number in each severity category. Record broken or unassessable material separately. Apply the agreed category limits and escalation rule in specification revision [identifier].” The bracketed fields require actual agreement; this example supplies no universal tolerance.
If a mass-based criterion is already in use, write that basis directly and retain the appropriate weighing method. If a named grade standard is required, identify its exact product scope and edition. USDA maintains separate resources for frozen berries and fresh blackberries. The existence of a fresh-fruit visual aid does not automatically make its thresholds the correct contract for a frozen ingredient.
Record the lot decision separately from the explanation of cause. The immediate decision may be acceptance, a defined second assessment, a hold pending evidence, or another agreed commercial action. Record who can authorize that decision and what unresolved information remains. If a different application is considered, it needs its own suitability and safety review; changing the use does not erase a failed requirement.
When a claim or discrepancy is closed, retain the original observation, the additional evidence and the final rationale together. Avoid rewriting the first record to make it sound more certain after the discussion. A record that says “red patches observed; cause undetermined” can be accurate and commercially useful. Precision about what is known makes the next order easier to specify.
